Crumble of cherries baked in a skillet

Ingredients

  • 500 gr cherries (pitted, fresh or from a jar)
  • 2 tbsp sugar
  • 100 gr flour
  • 50 gr oatmeal
  • 100 gr cold butter (diced)
  • 75 gr brown sugar
  • 1 tsp cinnamon
  • Pinch of sea salt

  • 500 gr cherries (pitted, fresh or from a jar)
  • 2 tbsp sugar
  • 100 gr flour
  • 50 gr oatmeal
  • 100 gr cold butter (diced)
  • 75 gr brown sugar
  • 1 tsp cinnamon
  • Pinch of sea salt

Preparatory work:

  • If using fresh cherries, stone them. Mix the cherries in a bowl with the sugar. Set aside.
  • In another bowl, mix together the flour, oatmeal, brown sugar, cinnamon and sea salt. Add the cold butter and rub through the mixture with your fingertips until it resembles coarse breadcrumbs. Place in the refrigerator until use.

Let's cook!

  • Place the cast iron skillet on the plancha plate and let it heat up for a few minutes.
  • Add the cherry mixture to the heated skillet and spread evenly. Cook for 5-10 minutes until the cherries begin to bubble and the sauce thickens.
  • Crumble Add:
  • Remove the crumble topping from the refrigerator and spread evenly over the cherry filling in the skillet. 
  • Take a 2nd skillet that you will use as a lid and fill with smoldering pieces of wood. Bake the crumble for 20-25 minutes, or until the topping is golden brown and crispy.

Suggestion

  • Serve with vanilla ice cream or whipped cream for an extra treat.
