Grilled grapefruit cocktail

- 1 grapefruit

- 60 ml of gin

- 30 ml freshly squeezed lime juice

- 15 ml simple syrup (equal parts sugar and water, heated until sugar is dissolved and cooled)

- Ice cubes

- Optional: fresh thyme for garnish

Preparatory work:

- Have ice cubes ready.

- Cut the grapefruit in half; also provide a few wedges as a garnish.

Let's cook!

- Heat the plancha over medium-high heat.

- Grill the grapefruit on the honey grate grill for 3-5 minutes, until they have nice grill marks and are slightly caramelized.

- Remove the grilled grapefruit halves from the plancha and let them cool.

- Squeeze the juice from one half of the grilled grapefruit and strain the juice to remove any pulp.

- Fill a cocktail shaker with ice cubes. Add the freshly squeezed grilled grapefruit juice, gin, lime juice and simple syrup.

- Seal the shaker tightly and shake vigorously for about 15 seconds, until the mixture is well chilled.

- Strain the cocktail into a chilled glass filled with ice cubes.

- If desired, garnish the cocktail with a sprig of fresh thyme for an aromatic touch.
