Ingredients
For the waffle batter:
- 250 grams of all-purpose flour
- 2 tablespoons of sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon salt
- 420 milliliters of milk
- 80 milliliters of peanut oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the lime ricotta:
- 250g ricotta cheese
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons finely chopped fresh mint leaves(optional)
- 2 tablespoons of honey
- A pinch of salt
For the Blueberry Compote:
- 150g blueberries
- 2 tablespoons of sugar
Finish:
- Zesty of lime
- Honey to taste

Preparatory work:
For the waffle batter:
- In a large bowl mix 250 grams of flour, 2 tablespoons of sugar, 1 tablespoon of baking powder and 1/2 teaspoon of salt.
- In a separate bowl, beat 2 eggs and add 420 milliliters of milk, 80 milliliters of peanut oil and 1 teaspoon of vanilla extract. Mix well.
- Pour the wet mixture into the dry ingredients and stir gently until everything is just combined. Lumps are fine.
Blueberry Compote Preparation:
- Heat blueberries and sugar in a skillet on the plancha until the berries are soft and combine with the sugar to form a delicious compote.
Lime Ricotta Making:
- Mix ricotta, lime juice, lime zest, chopped mint, honey and a pinch of salt in a bowl. Set aside.
Let's cook!
1. Baking the Waffle:
- Place the cast iron mold in the fire for a few minutes.
- Once preheated open the waffle iron and test with water to see if you are ready for your first waffle. The water should evaporate immediately but should not start dancing. If the droplets jump to all sides, then wait a little longer.
- Grease the iron with baking spray. Place a well-filled ladle of batter into the waffle iron. Now place the iron over the fire and turn after 3 minutes. After 2 minutes on the other side, your waffle is ready to finish.
2. Serve:
- Place the baked waffle on a plate. Spoon a generous amount of lime ricotta on top and add the warm blueberry compote. Garnish with lime zest and drizzle with honey to taste.
Suggestion
- You can certainly alternate in terms of fruits for the compote. That way you can deliver a different taste experience to your guests each time.
